My guest today is author Lacy Williams. She is one of the authors who is part of the latest Inspy Kisses Novella Collection. The others are Margaret Daley, Brenda Minton and me.<\/span><\/p>\n

Williams Family Corn Casserole<\/p>\n

*1 can whole kernel corn, drained<\/p>\n

*1 can creamed corn<\/p>\n

*1 stick butter (or 1\/2 cup margarine), melted<\/p>\n

*1 T. sugar<\/p>\n

*1 box Jiffy corn muffin mix<\/p>\n

*1 cup sour cream<\/p>\n

*2 eggs<\/p>\n

Mix all ingredients in a medium mixing bowl. Spray a 9 x 13 glass pan with Pam or rub with butter, then pour batter into the pan. Bake at 375 degrees for 45 minutes or until edges are golden brown and center just begins to crack.<\/p>\n

This is a beloved side dish in my husband\u2019s family. Birthday? Special family dinner? Christmas dinner? This casserole gets served (usually two full casseroles are made for all the hungry tummies!).<\/p>\n

In the Williams family, there\u2019s also a tradition that if you are celebrating a special occasion (usually a birthday), the person being celebrated gets to eat off of a Waechtersbach Red Plate. (Picture http:\/\/www.waechtersbachusa.com). When my husband and I got married, my mother-in-law gifted us with our own Red Plate for our family!<\/p>\n

In “Jingle Bell Cowgirl,” the hero and heroine share a poignant meal together<\/strong><\/p>\n

\u2014it\u2019s the first time the hero Ben has shared a meal with a woman since his wife passed away. Here\u2019s a snippet from the scene:<\/p>\n

He nodded to the TV visible behind her. \u201cI\u2019m not really into Christmas movies.\u201d Mia had been.<\/i><\/p>\n

She glanced around in an exaggerated manner. \u201cYou don\u2019t seem to be into the holiday at all. Even I have a tiny tree in my apartment.\u201d<\/i><\/p>\n

He turned his back and grabbed two plates from the upper cabinet next to the sink. Thinking about Christmas just hurt too much. <\/i><\/p>\n

When Mia died, he\u2019d been forced to come home and take down her boxes of decorations. He\u2019d shoved them in the back of the attic, and there they\u2019d stayed ever since.<\/i><\/p>\n

If that made him a Scrooge, then\u2026so be it.<\/i><\/p>\n

\u201cYou\u2019ll shoot your eye out, kid.\u201d<\/i><\/p>\n

\u201cHmm?\u201d He glanced over his shoulder, but she\u2019d turned so that her back was to the door and her gaze was on the Christmas movie. He\u2019d hoped she\u2019d turn it off.<\/i><\/p>\n

And then the kid got shoved down the slide at Santa\u2019s village, and Ben found himself smiling. Even chuckling, just a little.<\/i><\/p>\n

Lila glanced over her shoulder, their smiles and gazes connecting.<\/i><\/p>\n

She averted her eyes quickly.<\/i><\/p>\n

She distracted him by quoting the movie again as she came into the kitchen and located the cutlery drawer.<\/i><\/p>\n

Their shoulders bumped in the close space as she stepped past him to set the small nook table where he and Mia had eaten so many meals together. <\/i><\/p>\n

He got hung up with both plates of steaming lasagna in hand, staring at those place settings.<\/i><\/p>\n

Lila was the first woman who\u2019d come in here since Mia\u2019s death, and looking at the silverware set out at exact angles to the table\u2019s edge made him intensely aware of it.<\/i><\/p>\n

He cleared away the frog of emotion in his throat. \u201cWhy don\u2019t we eat on the sofa?\u201d<\/i><\/p>\n

She took one of the plates of steaming food from him as he scooped up the cutlery from the table.<\/i><\/p>\n

Sitting across from her on the sofas was better\u2014he and Mia had always sat side-by-side, sometimes snuggling under an old quilt together. The distance and being face-to-face with Lila helped him separate things in his mind.<\/i><\/p>\n

It didn\u2019t stop his awareness of her dancing eyes.<\/i><\/p>\n

The movie cut to a commercial, a familiar jingle that had played countless times each Christmas season that he could remember.<\/i><\/p>\n

And Lila was suddenly singing along.<\/i><\/p>\n

She looked at him, raising her brows, daring him to join her. <\/i><\/p>\n

No way. He shoved a bite of lasagna in his mouth. <\/i><\/p>\n

But he still found himself humming along by the end.<\/i><\/p>\n
