Are You Feeling the Pinch of Inflation?
The TV voices keep telling us that this level of inflation has not been seen since the 1970’s. Such a cheerful thought. I was a young wife in the 70’s and believe me, I could easily have lived without history repeating itself. But grumbling doesn’t help, does it? (Though I still do it!’-)
Anyway I began thinking of ways that I handled inflation then and have begun using these tactics again.
- Ground turkey. Though more expensive now, it’s still significantly cheaper by the pound than ground beef. I usually stretch my ground beef with it. No one seems to notice and it helps the bottom line.
- One vegetarian meal a week. I have an ancient recipe, Enchilada Bake, that I’m using again. (See below)
- Also are you acquainted with Barilla Protein Plus Pasta? It costs a bit more but one 2 oz. serving of the pasta has 10 grams of protein. So that means I can use less or no meat in a recipe.
- Gardening and canning.
- Baking my own bread. (Thank goodness, I have a bread machine now!)

Enchilada Bake
1 can or of sliced mushrooms drained or 1 cup fresh
1 large green pepper, diced
1 onion, diced
1 8 oz can tomato sauce
1 can diced tomatoes, drained
2 cans pinto beans drained or 2 refried beans or 1 of each ,
4 corn tortillas (more if small)
spices: 1 teaspoon garlic powder
1 teaspoon chicken bullion, dry
1/2 teaspoon chili powder
1/4 teaspoon cumin
This is a flexible recipe and many of you may want to add such things as jalapeños or more cumin and chili powder; do it to taste.

1 cup shredded Mexican cheese – your choice
1 cup sour cream or plain yogurt
Combine all the ingredients down to the ***** in a saucepan and simmer until warm. Then in a sprayed 9 x 13 pan, layer like lasagna starting first with the 2 tortillas, then half of the mixture in the pan, 2 tortillas. Smooth the sour cream or yogurt over the tortillas. Top with the rest of the mixture and then finish with the cheese. Bake at 350° for approximately 25 minutes or until it bubbles.

I was so happy to find another charming cozy mystery series. The main characters are two Italian retired teachers, Etta and Dora, who decide to do home swapping so they can travel around Europe. This is the second in the series, but each story is a standalone. I usually don’t go for dogs who comment on the humans in books, especially those who are smarter than the people. It’s something that must be done just right or it falls flat. However, Napoleon or Leon is just so much a real basset hound his occasional point of view comes off just perfect. It’s not annoying.
At first I wondered about all the travelogue details, but then I decided I like them because they were sprinkled throughout and gave me a real flavor of the island they were visiting off the coast of Denmark. I wondered that two Italian ladies would go so far north at Christmas time, but they seem to weather it well. I have already started the first book in the series and intend to read the whole series. Intriguing mysteries and very charming realistic characters made for a pleasant reading experience. Thank you, Adriana Licio!

Have you ever taken in a stray animal or
Adopted a pet from the shelter? I have done both.
I told my mother once she must be on the lost animals list of good places to beg. She took in all kinds of strays. One year when I came home from college for Thanksgiving, I found that she had a little white lost poodle, five kittens that had been threatened with drowning, another cat that was threatened with being euthanized, and the coup de grace, my stepdad found a lost parakeet trying to eat birdseed in our backyard. That was just one time when our little house was full of strays. (Of course, my mother always kept a birdcage in the basement. Who doesn’t?)
PS: She put an ad in about the lost dog and the family came and picked it up. And an ad in the paper giving away the kittens and all five of them went to very happy children. She adopted the older cat and named him Smitty. He lived with her till he was 19. And the parakeet lasted until Smitty learned how to get the birdcage open, but on the bright side, the bird had an extra nine months of pampered living.
Now to my life as an easy-touch:
When I was just a young single, my mother dropped mature Professor off at my apartment. (I named him that because he was the smartest cat I’ve ever known!) He stayed with me for nine years before he passed away. Sheba also came to our door and lasted for several years. In Iowa, Shadow came to our door and within a month delivered five kittens. Shadow was the cat that grew up with my children and we still have very fond memories of the sweetest cat ever.
When we moved north, we found out that there are no strays in the woods because they are “delicacies” to many wild animals. So we were forced to go to the animal shelter and we chose Sadie and V-8. Then our daughter moved in with her cat Trixie, and then my mother-in-law passed away and we took in her cat Mutzie (Slovenian for Kitty).
Presently V-8 is here alone because the other three have been buried in our cat cemetery out back.V-8 is approximately 22 years old which is the equivalent of over 100 years in people years. So he is suffering from arthritis but it’s still one of the sweetest most laid-back cat I’ve ever had. We are waiting till he passes before we go to the shelter to get another two cats.
I am not happy without without a cat or two in the house. I do like dogs but our neighbors are very close and we have no sidewalks since we live in the woods and we have a lot of ice and snow in the winter so I don’t want to have to walk a dog. But I love it when dogs visit. So how do you get your pets? Have you ever taken in one who really needed a home? I’d love to hear your stories because each unexpected animal is so special.
